MEXICAN PINWHEELS

Really, really yummy. I actually used canned chicken which made it super quick and still tasted really good. I did make it the night before so the flavors could "marry".


Mexican Pinwheels are a slightly spiced creamy chicken blend rolled up in easy to eat bite sized pinwheels. Soft pillowy tortillas wrapped around colorful, amazing flavored filling are going to be a hit at your next gathering!

Ingredients

  • 12 ounce cream cheese softened
  • 1/2 cup sour cream
  • 1 10 ounce can rotel drained (tomatoes with green chilis)
  • 1/2 green bell pepper finely diced
  • 2 cups chicken cooked and shredded
  • 2 cups Mexican cheese shredded
  • 2 Tablespoons Homemade Taco Seasoning
  • 2 Tablespoons green onion chopped
  • 2 tablespoons cilantro chopped
  • 6 flour tortillas

Instructions
 

  • In a large bowl or stand mixer combine cream cheese, sour cream, rotel, bell pepper, chicken, cheese, taco seasoning, green onions and cilantro. Using the mixer or hand mixer beat together until smooth.
  • Place 1/4- ½ cup of the mixture on the tortilla and spread leaving about an inch from the edges. Roll up tightly and refrigerate for an hour.
  • Slice into one inch pinwheels and serve.

Ham and Cheese Pinwheels with Spinach

I really liked these wraps. Simply and quick to put together and yummy. I liked the cream cheese and mayo combo.


These ham and cheese pinwheels are not only the perfect appetizer for your party but also a tasty lunch or afternoon snack! Easy and quick recipe that crowds love!

Ingredients

  • Cream Cheese , see note 1
  • 2 tbsp Mayonnaise , see note 2
  • 2 Flour Tortillas , see note 3
  • Deli Ham Slices, see note 4
  • 4 Cheddar Cheese Slices, see note 5
  • 2 cups Fresh Spinach Leaves , see note 6
Prevent your screen from going dark

Instructions 

  • Mix the cream cheese and mayonnaise until smooth. Spread a thin layer over a tortilla wrap. Cover this with slices of ham. Then, place sliced cheese over the half that is close to you. Arrange spinach leaves on top (check the photos for better understanding) and roll tight. Wrap it in plastic wrap and chill in the fridge until ready to serve.
  • Repeat with the second one.
  • When ready, remove the wrap and slice each roll thinly and serve.

Notes

  1. Take the cream cheese out of the fridge beforehand so it has time to soften.
  2. Mayonnaise can be omitted.
  3. I used large tortilla wraps – each 10-inch/25cm in diameter. You can use medium wraps as well, if that’s what you have on hand.
  4. The number of slices you will need depends on your taste, on their size, thickness, and also on the size of tortillas you use. You can use any kind of ham you like.
  5. The same goes for the cheese. Use what you like and how much you like. Just don’t over-fill.
  6. Spinach – use only fresh spinach for this recipe. Take this amount as a guide and use as much as you like.
  7. You might get more or less pieces depending on how thin you cut the wraps and what size wraps you use.
  8. Chilling is optional. If you want to eat them right away, then you can do so. If you prefer to chill them first, then leave them in the fridge for at least 1 hour (you can make them up to 6 hours in advance).
